ERDNUSSBUTTER SCHOKO KEKSE/ PEANUT BUTTER CHOCOLATE COOKIES


Unglaublich köstliche, knusprige, leicht salzige und aromatische  ERDNUSSBUTTER SCHOKO KEKSE! Super einfach zu machen und braucht keine außergewöhnliche zutaten. They can be yours in less than 20 minutes!


Zutaten

100gr fein gemahlene haferflocken
50gr dinkelmehl
50gr erdnüsse grob gehakt
3el kokosblütenzucker
1el leinsamenmehl + 3el wasser
1el schoko chips
1/2tl backpulver
salz
vanille pulver
4el erdnussmus
2el ahornsirup o. ähnliches
80ml kokosöl



Zubereitung

1. Den backofen auf 180 grad (umluft) vorheizen und ein backblech mit backpapier auslegen, zur seite stellen.
2. Leinsamenmehl mit wasser vermischen und etwas andicken lassen.
3. In einer großen schüssel alle trockenen zutaten miteinander vermischen.
4. Nun die feuchten zutaten dazugeben, inkl. leinsamen mixtur und zu einem homogenen teig verarbeiten.
5. Aus dem teig ungefähr golfballgroße kugeln formen und auf das backblech legen, mit der hand flach andrücken.
6. Die kekse im backofen ca. 10-12 min ausbacken und danach abkühlen lassen.

Incredibly delicious, crunchy, slightly salty and aromatic PEANUT BUTTER CHOCOLATE COOKIES! Super easy to make and does not need any extraordinary ingredients. They can be yours in less than 20 minutes!

Ingredients

100gr oat flour
50gr spelt flour
50gr peanuts roughly chopped
3tbsp coconut sugar
1tbsp ground flax + 3tbsp water, mixed together
1tbsp chocolate chips
1/2tsp baking powder
a pinch of salt
vanilla powder
4tbsp peanut butter (without sugar or salt)
2tbsp maple syrup or similar
80ml coconut oil



Directions

1. Preheat oven to 180 degree, line a baking tray with parchment paper, set aside.
2. Mix ground flaxseed with water and set aside to thicken.
3. In a large mixing bowl combine all dry ingredients.
4. Pour wet ingredients into dry, incl. flaxseed egg and mix until well combined.
5. Roll the dough into balls approx. the size of a golf ball. Place on the tray and flat with your hand to create a round disc.
6. Bake the cookies for approx. 10-12 minutes and let cool for 10 minutes.

SCHARFE KÜRBISCREMESUPPE/SPICY PUMPKIN SOUP


Nun ist es wieder soweit, die tage werden länger, kälter und grauer und die kleidung schwerer und wärmer. So ein schmuddelwetter ist perfekt für eine warme scharfe kürbiscremesuppe! Dieses rezept hab ich schon soviele mal gekocht; es ist kinderleicht und kommt immer gut an. Seitdem ich diese suppe im Vitamix püriere hat es ein richtiges upgrade erhalten, cremig und fein püriert in weniger als einer minute. Und den feinschliff bekommt das ganze mit kürbiskernöl und gerösteten kürbiskernen. Ich hoffe es schmeckt euch!

Zutaten

700gr hokkaido kürbis, in grobe würfel geschnitten
350gr kartoffeln, geschält und in grobe würfel geschnitten
1grosse karotte (ca. 100gr), geschält und geschnitten
1 knoblauchzehe
ca. 2cm ingwer
1el kokosöl
1,2 liter wasser
1/4tl chilliflocken
salz
pfeffer
geröstete kürbiskerne (optional)
kürbiskernöl (optional)


Zubereitung

1. Das kokosöl im topf erhitzen und kleingehackten knoblauch und ingwer hinzufügen und ca. 2 minuten anschwitzen.
2. Nun chilliflocken, kürbis, kartoffeln und karotten dazugeben, alles gut umrühren und noch ca. 1 minute anschwitzen. Anschließend mit wasser ablöschen, salz hinzufügen und aufkochen. Ca. 20 min köcheln lassen bis das gemüse gar ist. 
3. Nun alles in den mixer geben und auf höchster stufe fein pürieren. Falls kein mixer vorhanden ist mit einem pürierstab fein pürieren.
4. Die fertige kürbiscremesuppe zurück in den topf geben und mit pfeffer abschmecken.
5. Die suppe mit gerösteten kürbiskernen und kürbiskernöl dekorieren und servieren.

It's that time of the year when the days become longer, colder and more gray and we need to wear all the heavy warm clothes again. Such a nasty weather calls for warm, spicy pumpkin soup! I've cooked this recipe so many times, it's so simple and delicious. Since I puree the soup in the Vitamix it has received a huge upgrade, it's so creamy in less than one minute! The pumpkin soup tastes much better topped with roasted pumpkin seeds and pumpkin seed oil. Enjoy it!

Ingredients

700gr hokkaido pumpkin, chopped into chunks
350 potatos, peeled and shopped into chunks
1 big carrot (ca.100gr) peeled and chopped
1 clove of garlic
ca. 2cm ginger
1tbsp coconut oil
1,2 liter water
1/4tsp chilli flakes
salt
pepper
roasted pumpkin seeds (optional)
pumpkin seed oil(optional)

Directions

1. Heat the coconut oil in a large saicepan, then add chopped garlic and cook for approx. 2 minutes.
2. Add the chilli flakes, pumpkin, potatos and carrots to the pan, stir well and cook for another minute. Pour the water into the pan and season with salt. Bring to the boil, then simmer for 20 minutes until the vegetables are very soft.
3. Transfer soup mixture into a blender or use an emulsion blender to puree the soup.
4. Pour pumpkin soup back into pan and season with pepper.
5. Serve with roasted pumpkin seeds and pumpkin seed oil on top
